Vision

I wish for my food to put a smile on the faces of those who need gluten-free choicesin Japan and around the world.

My roots in becoming a chef lie in my upbringing. Growing up with a mother who was a great cook, always surrounded by delicious food, I learned that people naturally smile when they eat something good.As far back as I can remember,I was always very interested in cooking and I felt its joy.

My interest in gluten-free food first sparked when I moved to the United States.
I noticed that in the U.S. there were many gluten-free restaurants, but in Japan almost none.  There are however, many people in Japan who need it. Many of these people had no expectations of eating out, and had given up on eating good food because of their restrictions. This ignited a fire in my heart, and in (year of opening) I opened a gluten-free specialty restaurant.

Now, I am passionate about proving that you can eat delicious food with peace of mind, even if it is gluten-free, so…

What is gluten...

Gluten is a general name for the proteins found in wheat, rye, and barley.Gluten helps foods maintain their shape, acting as a glue that holds food together. Gluten can be found in many types of day to day foods like bread, cakes, pizza even ones that would not be expected, such as soups, sauces, ready meals and sausages.

Modern diets have become increasingly high in refined wheat products, which has led to the consumption of significant amounts of gluten. It is thought that some individuals are more sensitive to gluten than others. For the gluten sensitive individual, over consumption may lead to digestive symptoms such as bloating, pain and stomach cramps. For this reason and the health benefits, growing numbers of people are now choosing to follow a gluten-free diet.

Celiac disease is on the up around the world with 250.000 people in the Kanto area who has wheat allergies and can’t eat any form of Gluten. We only serve the best gluten-free food and beverages, so that you can comfortably dine without the worries of you’re health.
